Caramelised onions & Lancashire cheese on toast
Heat the grill. Slice half an onion finely and fry slowly in a big bit of butter on a low heat until brown. Toast brown bread, crumble a good chunk of cheese on top, tip the onions and fat on top of that, and finish with a bit more cheese. Place under the grill for one min, until the cheese is melted but not brown. Grind over black pepper, and maybe scatter some thyme leaves.
